It also got me wondering what they taste like, so I did some googling and stopped when most articles started with getting out tin snips and a hatchet to clean one. They're good. Don't take but about five minutes to clean one, and you get two big strips of nice, white boneless meat. It tastes more like alligator than fish. Also had the one run and done thing as well as somersaults and triple lindys. No gar expert for sure but i have had some real drag screamers in the big ones.
